Soak Up Summer

View in browser Soak up Summer Summer in the Okanagan is amazing. We have lakes for endless water activities, hiking trails, beaches and sunshine! Although the hot sun can be too much at times, when combined with enough water, it is perfect for growing and ripening fruits and vegetables. We are excited for the plethora of produce that is soon to come. Strawberries are done for the season, cherries are here, and very soon we will have the long awaited peaches! After a few years of no crop (or a very small crop) our taste buds are excited to bite into a sweet juicy peach again. The crop is looking great so far so the wait is nearly over!    We enjoyed a great Canada Day here at the farm with lots of fun on the tractor rides, family photos, and a dress up contest for our staff,  the winner was Jackie! - hats off to everyone who participated – customers and staff alike!     I took a walk through the farm this week and am amazed how well the vegetables are growing. Rows upon rows of peppers, tomatoes, zucchini, squash and sweet corn. The weeds are under control and the fields look awesome! If you walk along the Grey canal trail above the farm you will get a bird’s eye view of the farm. If you are able to take an Orchard Tour you’ll get a closer look at crops growing. Orchard tours now run EVERY DAY from 10am – 4pm so come by and see the abundance for yourself.    This week I’m preparing for the upcoming pepper crop. My favourite summertime meal is stuffed peppers with fresh corn on the cob, sliced vine ripened tomatoes, sprinkled with fresh herbs and feta cheese. Nothing says summer to me more than this meal. I make a large batch of stuffing mix ahead and freeze it so I have the easiest supper ever. Preparing ahead gives more time to enjoy summer activities and is great served anytime even if company drops in! I’ll share my large batch recipe with you so give it a try - you’ll be glad you did.
